It smells like Christmas already…! YES, I said it.. CHRISTMAS!!!! It is bound to happen to us all now… as the days creep closer and closer…and we see the decorations and lights going up all over the place… you KNOW it’s time to start planning ahead… it’s never to early to plan your Christmas and New Years menus… I know I sound barking mad… but I promise, it will be such a relief when you are a week away from your entertaining spree and you need to think and make your shopping list… And you pull out your menu that you prepared weeks ago… And you get clarity and sudden calm….
You will thank me…
I tend to use a lot of puff pastry when entertaining a) because it’s easy peasy and even though I’ve learned how to make the stuff from scratch I will NOT do it and (b) because it’s a crowd pleaser… every time…
It’s simple… everyone loves apple pie… so the flavours are classic and warm and wintery… all I’ve done is add blueberries for a little kick of acidity… as if the granny smiths weren’t enough… and put them in easy puff pastry cups… it’s just way too easy…!
- 1 sheet puff pastry
- 2 T melted butter
- 2 tsp sugar
- 2 apples, cored and cut into small cubes
- 3 T brown sugar
- 1 T cinnamon
- 2 tsp lemon juice
- 1 handful blueberries
- Preheat oven to 180 degrees.
- Cut puff pastry sheet into six pieces. Prick with a fork and brush with melted butter and place into greased cupcake/muffin tins. Sprinkle pastry with white sugar.
- Combine remaining ingredients. Divide between pastry cups. Bake for 20-25 minutes or until pastry is golden. Serve with vanilla ice cream if you like!
