A journey into Indian gastronomy and flavours from the hand of Anjalina Chugani
Flavours and stories of Indian cuisine. Rasa is a truly special cookbook. Its author, Anjalina Chugani, comes from an Indian community called Sindhi, although she was born in London and settled in Barcelona years ago. The book is a wonderful journey throughout her life through the kitchen.
The book is structured in chapters that form the author’s life journey: her roots, English tea and masala chai, Bangalore and street food, Ayurveda, the cuisine she prepares for her family in Barcelona and a final chapter with ideas and inspiration for those moments when you don’t know what to prepare for yourself.
In addition to the recipes, there are also tips and other useful explanations for any cooking and exotic flavour lover: how to prepare and where to buy pulses and spices, what is ghee and how to prepare it, what does chaat mean, what is umami, how to handle spices when cooking, and so on.
The detail and beauty in the design of the dishes that Anjalina Chugani has created can be appreciated in the fantastic photographs by Becky Lawton, who accompanied the author on one of her trips to India to capture in situ the very special atmosphere that this book embodies.
Finally, this fantastic work is completed with a playlist in QR with songs chosen by the author in a medley that is the summary of everything she narrates. Music from Diwali parties or Indian weddings and also what can be heard on the radio in India or after any family gathering.
